I am considering upgrading my POS system to include scanning. Are there any metrics or rough estimates I should use on a per store basis

Scanners are so inexpensive these days that a decent rule of thumb is: if it's worth being in business at all, you should have a scanner at every cashier. Your price look-up accuracy will more than pay for the equipment and software. And it's likely that the equipment and software will be useful for 5 to 8 years. You can buy reliable hand-held bar code scanners for less than $200 each
